Ingredients

 4 loin pork chops, 2.5 cm / 1 inch thick, 150 g / 6 oz each
 1 cup / 100 g / 4 oz Cheddar cheese, grated
 STUFFING
 3 tbsp / 15 g / 1 1/2 oz butter
 Onion1 Small, finley sliced
 Good 1/2 cup / 50 g / 2 oz button mushrooms, finely chopped
 2 tbsp / 50 g / 2 oz cooked rice

Directions

Slice through the pork chops horizontally from one end, leaving a border on two sides to form a pocket.
Cook the butter on high for 1 minute, add the onion and mushrooms and cook on high for 3 minutes. Stir in the rice.
Spoon the stuffing mixture into the pockets in the pork chops and secure with wooden cocktail sticks.
Arrange the chops in a dish with the thickest parts to the outer edge. Cover and cook on high for 5 minutes. Rearrange and turn the chops, then continue to cook them for a further 9-10 minutes on medium. One minute before the end of the cooking time sprinkle with the grated cheese or brown under a conventional grill (broiler).
