 Poi leaves, 12 to 15
 Potatoes, medium size, boiled, 3
 Carrots2 , boiled
 Peas1/2 Cup (16 tbs), boiled
 Beans, boiled, chopped, 1/2 cup
 Gram flour1 Cup (16 tbs) (For batter :)
 Salt1 Teaspoon (For batter :)
 Chilli powder1 Teaspoon (For batter :)
 Chopped green chillies, ginger and coriander leaves
 Salt & lemon juice to taste
 Cumin seeds1/2 Teaspoon (For batter :)
 Turmeric1/2 Teaspoon (For batter :)
 Garam masala1/2 Teaspoon (For batter :)
 Frying Oil2 Cup (16 tbs) (For frying)
 Turmeric1 Pinch (For batter :)
 Soda-bicarb, a pinch

Directions

Heat 1 tablespoon oil.
Add cumin.
When it turns brown, add chopped onion and cook till light brown.
Add green chillies, ginger and coriander leaves.
Add boiled vegetables and spices.
Mix well.
Remove from heat.
Add lemon juice.
Place a tablespoon of this filling on half of the front side of the leaf and fold the remaining half of the leaf over the filling; press well.
Cover stuffed leaves with damp towel.
Make a smooth batter out of gram flour.
Add spices, one teaspoon oil and soda (soda should be added just before frying).
Dip stuffed leaves in the batter and fry them in hot oil till light brown.
Put on absorbant paper.
