Stuffed Pineapple Recipe
Ingredients
| Pineapple | 1 Large | |
| Caster sugar | 2 Tablespoon | |
| Curacao | 1 Tablespoon | |
| Rum | 2 Tablespoon | |
| Juice of 1-2 passion fruits | ||
| 1 ripe mango, peeled, stoned and cubed | ||
| 1 ripe pawpaw or papaya, peeled, seeded and cubed | ||
| Juice of 1 lime | ||
| Lime quarters, to decorate | ||
Directions
GETTING READY
1) Cut pienapple lengthwise into half.
2) With a small knife, take out the flesh and cut into cubes.
3) Discard the pineapple core.
MAKING
4) In a bowl, mix the sugar, curacao and rum with passion fruit.
5) In the liquer mixture, add pineapple cubes, mango and papaya.
6) Toss well to mix properly.
7) In the pineapple halves, spoon the fruit-liquer mixture and pour the remaining juice all over.
SERVING
8) Serve the stuffed pineapple as dessert with lime quarters on the top.
