Stuffed Peppers Recipe

Stuffed Peppers can be served along any dish. These Stuffed Peppers stuffed with rice were just perfect. You will make it many more times.

Ingredients

 
4 medium green peppers olive oil cooking spray
 
3/4 lb (360 g) lean ground turkey
 
1 medium onion, chopped
 
2 cloves garlic, minced
 
1/2-1 tsp (3-5 ml) black pepper, to taste
 
2 tbs (30 ml) Fresh Tarragon, chopped
 
2 cups (480 ml) cooked rice
 
8-oz can (240 ml) tomato sauce
 
4 tbs (60 ml) Parmesan cheese, grated

Directions

Cut off pepper tops and remove seeds.
Chop tops, discarding stem.
Set aside.
Bring large saucepan of water to boil.
Immerse peppers; boil 5 minutes.
Drain and set aside.
Spray large, nonstick fry pan with olive oil spray and saute chopped pepper tops, turkey, onion, garlic, black pepper and fresh tarragon until turkey is browned.
Add rice and all but 4 tbs of tomato sauce.
Mix well.
Fill peppers with mixture.
Place in baking dish.
Top with 4 tbs tomato sauce and Parmesan.
