6 eggs
 
1/4 cup (60 ml) milk
 
1/2 garlic clove, finely sliced
 
1 French (dry) shallot, finely sliced
 
Salt and pepper
 
2 tbsp (30 ml) butter choice of garnish
 
Grated Parmesan cheese
 
Fines herbes

Directions

–  In a bowl, beat eggs with milk, garlic, and shallot. Season with salt and pepper.
–  In a skillet, melt 1 tbsp (15 ml) butter and saute your choice of garnish. Sprinkle with Parmesan and fines herbes and set aside.
–  In a separate skillet, melt rest of butter and cook egg mixture over medium heat. When cooking is three-quarters done, spread garnish on one side of omelet. Continue cooking until omelet is done, then fold the other side over. Slide omelet onto a serving dish. Divide into individual servings.
