 Corn oil2 Teaspoon
 Whole grain bread crumbs - 3/4 cup, soft
 Garlic1 Clove (5gm), minced
 Walnuts2 Tablespoon, chopped
 Fresh basil/tarragon - 2 tsp, minced
 Cottage cheese1 Tablespoon
 Buttermilk2 Teaspoon
 Paprika - a pinch
 Parmesan cheese - to garnish, grated

Directions

GETTING READY
1. Clean the mushrooms with a damp towel without peeling, remove and chop the stems and set the mushroom caps aside

MAKING
2. In a medium skillet, heat a teaspon of oil and saute mushrooms stems for a couple of minutes; add bread crumbs, garlic, nuts, herbs and cottage cheese
3. Add a litrle buttermilk to make this stuffing moist and add flavour with paprika; divide this stuffing between mushroom caps and sprinkle grated Parmesan on top
4. Baste the mushrooms with the rest of the oil using a pastry brush and place under the broiler for five minutes till sizzling hot

SERVING
5. Serve as required
