Stuffed Mushroom Thomas Recipe

Ingredients
2 Pkgs. Frozen Chopped Spinach
1 Cup Sour Cream
1 Lb. Ground Chuck
12 Large Mushrooms
1/4 Cup Each Green Onion Tops and Bottoms
1 Cup Grated Cheddar Cheese
1 Cup Grated Monterey Jack Cheese
1/2 Cup Parmesan Cheese
1 1/2 Tsp. Salt
1 Tsp. Italian Seasoning or Oregano
Nutmeg
Directions
Cook 2 pkgs chopped spinach according to directions, drain.
Mix 1 cup sour cream with spinach.
Add 14 cup grated cheddar, monterey jack, parmesan and 14 cup chopped green onion tops.
Also add 1/2 tsp. salt and 1 tsp. oregano or Italian seasoning.
Arrange mixture around edges of two 9 x 13 inch baking dishes.
Arrange the washed mushrooms, with stems removed and saved, in the middle of baking dishes.
Filling For Mushrooms: Saute' 1 lb. ground chuck.
Add sliced mushroom stems, 1/4 cup sliced green onion bottoms and 1 tsp. salt.
Spoon over mushrooms.
Top with 1/2 cup grated cheddar and jack cheeses.
Sprinkle with nutmeg.
Cover with foil.
Bake at 350 degrees for 35 minutes.
