Stuffed Lettuce Recipe

Ingredients
| 1 pound ground meat, or a mixture of meats, such as pork, pork sausage, beef, liver, lamb, or fish | ||
| Soft bread crumbs | 1 Cup (16 tbs) | |
| Egg | 1 | |
| 2 tablespoons milk or tomato juice | ||
| Salt | 1/2 Teaspoon | |
| Thyme | 1/4 Teaspoon | |
| Onion, garlic, green pepper and parsley to taste | ||
| 1 large head Boston lettuce | ||
| 2 cups beef or chicken broth | ||
Directions
1. Mix thoroughly all ingredients except lettuce and broth. Shape into a ball.
2. Remove the stalk from the lettuce, loosen the leaves under running water and drain. Place a few large leaves on a square of white cloth and set the ball of meat mixture on them. Wrap the inner leaves around the ball of meat, and then cover with larger leaves.
3. Wrap the lettuce-covered meat in the cloth and tie securely with string. Place in boiling broth in a deep saucepan, lower heat and simmer, covered, one hour, turning once.
4. Remove the cloth carefully and serve in thick slices with a sauce made by thickening the broth in the pot.
