Ingredients

 
2 tbsp oil
 
2 1bs calf liver
 
2 onions, chopped
 
1/4 cup parsley, chopped
 
2 mint leaves, finely chopped
 
2 cups cooked rice
 
1 cup apple sauce
 
1/2 cup tomato sauce
 
1 4 1/2 lb leg of Iamb
 
Pork fatback or bacon

Directions

Preheat oven to 325 °F (160 °C).
In a frying pan, heat oil.
Cook calf liver.
In a meat grinder, mince liver, onions, parsley and mint.
In a bowl, combine minced liver, rice, apple and tomato sauces.
Mix in seasonings.
Stuff leg of lamb with liver mixture.
Cover with lard or bacon.
Tie with a string.
Transfer leg of lamb to a roasting pan.
Roast uncovered in oven 30 minutes per 1 lb (450 g) of meat.
Baste often.
Transfer stuffed leg of lamb to a warm serving dish.
Surround with a garnish of mint jelly or peeled orange slices, if desired.
