Stuffed Halibut Steak Recipe

Ingredients

 
2 1/2 tablespoons oil
 
1/2 pound mushrooms, cleaned and minced
 
2 tablespoons dry bread crumbs
 
2 tablespoons minced fresh chives
 
1 2/3 teaspoons Mixed Salt
 
6 halibut steaks, each about 3/4 inch thick, skinned and boned
 
2 large ripe tomatoes
 
1 large ripe avocado
 
3 tablespoons freshly grated Parmesan cheese
 
Mustard Sauce
 
Garnish:
 
Lemon wedges

Directions

Preheat oven to 400 degrees.
Heat 1 tablespoon oil in saucepan over medium-high heat.
Saute mushrooms 1 or 2 minutes; stir in bread crumbs, chives, and 1 teaspoon Mixed Salt.
Let cool.
Cut a pocket into each steak and fill pockets with equal portions of cool mushroom mixture.
Brush the bottom of a baking dish with 1/2 tablespoon oil and sprinkle with 1/4 teaspoon Mixed Salt.
Arrange steaks in dish, brush with remaining tablespoon of oil, and sprinkle with as much remaining Mixed Salt as desired. (Steaks may be refrigerated at this point, covered, up to 2 hours.) Place fish in the preheated oven and bake 15 minutes, or until cooked through.
When fish is done, arrange alternate slices tomato and avocado on each steak.
Sprinkle with grated cheese.
Quickly glaze under a hot broiler just until cheese is lightly browned.
