Directions

MAKING
1) In a bowl, combine the onions, tomatoes, dry Mexican oregano, salt and pepper to taste and mix well together.
2) Make an incision in the Pasilla peppers over the top and stuff with the cotija cheese and the tomato and onion mixture.
3) Place the stuffed peppers over a heated grill, tuning every 3 minutes and cooking for a total of 12 minutes.

SERVING
4) Plate and serve as a main or side dish.
