Stuffed Green Sweet Peppers Recipe

Ingredients

 
3 stumpy green peppers
 
6 oz. leg of pork (with some fat on it)
 
1 dessertspoon canned water chestnuts
 
1 dessertspoon canned bamboo shoots
 
Salt, sugar and Ve-Tsin
 
1 teaspoon beaten egg
 
1-2 tablespoons peanut oil
 
1/4 pint (U.S. 5/8 cup) hot chicken stock
 
1/4 teaspoon soy sauce
 
3/4 teaspoon cornflour
 
1 dessertspoon cold water

Directions

Cut a thin slice off the stem end of each pepper and remove the seeds, leaving the 'divisions' intact.
Very finely chop the pork, chestnuts and bamboo shoots.
Mix them together.
Add a pinch of salt, sugar and Ve-Tsin and the beaten egg and work them well in.
Knead and throw the mixture as with dough when making bread.
Divide into three and fill each section of the pepper with a portion, gently pressing it in.
Get the oil very hot.
Place the stuffed peppers in it, meat sides down, and fry for 5-6 minutes.
Add the stock, another pinch of salt, sugar and Ve-Tsin and soy sauce and cook for a further 3 minutes.
Blend the cornflour with the water and stir it in.
Boil for 1 1/2 minutes.
