Stuffed Green Peppers Recipe

Ingredients
1/2 cup Stone-Buhr long-grain brown rice
1/4 cup salt
8 med green peppers
1 lb. ground beef chuck
1/3 cup onion, minced
8 oz. tomato sauce
1 tsp salt
Directions
Place rice in saucepan with 1 1/2 c. (375 mL) water.
Add salt and bring to a boil.
Cover and simmer until rice is tender and until all the water has been absorbed, about 40 minutes.
Cut off and reserve tops of green peppers: scoop out and discard seeds.
Place peppers upright in a baking dish.
Mix together beef, onion, tomato sauce, salt and cooked rice.
Stuff green peppers and replace tops.
Pour 1/2 c. (125 mL) water in bottom of baking dish and bake in a 350° (175°C) oven for about 1 hour.
Add salt and bring to a boil.
Cover and simmer until rice is tender and until all the water has been absorbed, about 40 minutes.
