Ingredients
1 pound lean ground beef
1 large onion, chopped
1/2 cup uncooked rice
3 tablespoons butter or margarine
1/2 cup chopped parsley
1/4 cup chopped mint
2 teaspoons salt
1 teaspoon each pepper and dill weed
3 or 4 dozen canned grape leaves or 1 medium head cabbage
1 cup water
Directions
Combine ground beef, onion, rice, butter, parsley, mint, salt, pepper, and dill.
Wash grape leaves in hot water; drain on paper toweling.
Spread 1 grape leaf on a flat surface with the underside up and the stem end toward you; cut off the stem.
Place about 2 teaspoons of filling near the stem end, then fold the sides of the leaf over the filling and roll away from you.
Continue until all the filling is used.
Do not roll tightly, as the rice will expand when it cooks.
Place close together in a large kettle (at least 6-quart size) on a layer of grape leaves.
Add water and place a heatproof plate on top of rolls to prevent them from breaking apart.
Cover pan and simmer for 40 minutes, or until rice is tender.
Drain rolls, saving the cooking liquid.
