Ingredients

 
4 medium potatoes, pared and cut in half
 
1/2 cup milk
 
2 tablespoons butter or margarine
 
Salt and pepper to taste
 
8 frankfurters
 
1/2 cup (2 ounces) shredded Cheddar cheese

Directions

1. Boil potatoes. Drain.
2. Heat milk in a 1-cup glass measuring cup in microwave oven until hot (15 to 30 seconds at High).
3. Mash or rice potatoes thoroughly. Whip in hot milk, butter, salt and pepper until fluffy.
4. Slit frankfurters down center to 1/16 inch from bottom. Open up and stuff each frankfurter with 1/4 cup mashed potatoes. Sprinkle cheese on top. Arrange stuffed franks spoke-fashion on a microwave-oven-safe plate.
5. Heat uncovered in microwave oven 2 to 3 minutes at High, or until cheese just begins to melt.
