Ingredients
1 1- to 1 1/4-pound flank steak
1/2 teaspoon instant non-seasoned meat tenderizer
2 tablespoons prepared mustard
1 1/2 cups dry bread cubes
1/8 cup chopped onion
1/8 cup chopped celery
3 tablespoons butter, melted
1/2 teaspoon poultry seasoning
1/4 teaspoon salt
Garlic or clear French dressing
Directions
Score steak on both sides; use meat tenderizer, according to label directions.
Spread one side of steak with mustard.
Combine bread, onion, celery, butter and seasonings for stuffing; spread over steak.
Roll as for jelly roll; fasten meat with skewers or toothpicks; then lace with string.
Balance meat on spit, insert holding forks.
Attach spit and turn on motor.
Baste with garlic dressing.
Roast over medium coals about 35 minutes or till done, basting frequently with garlic dressing.
