Stuffed Fillets Of Sole Recipe

Ingredients
1 lb (450 g) fillet of sole
Stuffing
1 egg
1/2 Cup (125 ml) celery, diced
1/2 Cup (125 ml) soft part of bread toasted and crumbled
1/4 Cup (60 ml) milk
Salt and pepper
Tartare Sauce
2 French (dry) shallots, finely chopped
1 Cup (250 ml) bechamel sauce
1/2Cup (125 ml) mayonnaise
1/4 Cup (60 ml) pickles, chopped
1/4 Cup (60 ml) olives, chopped
1/4 Cup (60 ml) parsley, chopped
Directions
– Preheat oven to 375 °F (190 °C).
– Pat sole fillets dry and set aside.
– In a bowl, combine stuffing ingredients, spread between two fillets and set aside.Butter a baking dish, add the stuffed fillets and bake for 15 to 20 minutes. In a bowl, combine all tartare sauce ingredients and warm over low heat. Pour the sauce over the fish.
– Pat sole fillets dry and set aside.
