Turkish Style Stuffed Cucumber Recipe

Stuffed Cucumbers Bayaldi is my father's favorite. I prepare this Stuffed Cucumbers Bayaldi specially for him when he comes over my place. You will truly miss it if you do not try it!

Ingredients

 
2 English cucumbers, peeled, cut into 1 1/2 inch (3.75 cm) segments
 
4 tsp (20 ml) olive oil
 
3 tomatoes, diced
 
2 tbsp (30 ml) fresh mint
 
Salt and pepper

Directions

–  Blanch cucumbers for 2 minutes in salted boiling water. Rinse under cold water and drain.
–  Scoop out pulp of cucumbers and set aside.
–  In a skillet, heat oil and saute tomatoes, then add mint and season with salt and pepper.
–  Spoon stuffing into cucumbers and place in a daisy steamer for 5 minutes.
