Stuffed Cucumber Recipe
Ingredients
| Cucumber | 1 Large | |
| 1 cup prepared vegetable salad | ||
| 1 1/2 cups cooked peas | ||
| Parsley | 4 Tablespoon, chopped | |
| Wine vinegar | 3 Tablespoon | |
| Sugar | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Cooked ham slice | 4 | |
| Cheese | 4 | |
| Onion rings | ||
Directions
Cut away the top one-third of the cucumber lengthwise, peel and cut finely.
On the underside of the remaining two-thirds, cut lengthwise, so that a level base is formed, and then hollow out the middle, using a spoon.
Mix the cucumber flesh with the finely cut one-third, the prepared salad, peas and parsley.
Mix the vinegar with 1 tablespoon water, the sugar and salt.
Pour into the hollow cucumber and leave for 5 minutes.
Cut the ham slices in halves and form each one into a small roll.
Cut the cheese into triangles.
Pour the vinegar mixture out of cucumber, and fill it with the salad.
Top with the ham rolls and cheese triangles.
Garnish with onion rings.
