Stuffed Chicken Quarters Recipe
Ingredients
| Mushrooms | 1/2 Cup (16 tbs), minced | |
| Green onion | 1/3 Cup (16 tbs), chopped | |
| Prepared barbecue sauce | ||
| Cooked rice | 1 1/2 Cup (16 tbs) | |
| 1 broiler-fryer chicken, quartered | ||
Directions
MAKING
1. In a one quart saucepan, mix together the mushrooms, onion and quarter cup of barbeque sauce and cook them over low heat till the vegetables soften
2. Add rice and heat once again through
3. On each of the chicken quarters, loosen the skin and form a pocket between the skin and the meat; stuff some of the vegetables mix into this pocket and secure it with skewers
4. If cooking outdoors, place chicken on a well grased grill with the skin side facing up about five inches or more away from the coals and grill over low flame for twenty minutes on each side, basting with barbeque sauce
5. If cooking indoors, place the chicken with the skin side up on a 12"X8" Baking dish, brush with barbeque sauce adn bake in an oven preheated to 350° F for an hour till tender
