Stuffed Cherry Tomatoes Recipe
Ingredients
| 24 red or yellow cherry tomatoes | ||
| 1/2 cup dry-curd cottage cheese | ||
| Spinach | 1/4 Cup (16 tbs), minced | |
| Basil | 1 Tablespoon, minced | |
| Snipped chives | 2 Teaspoon | |
Directions
Slice off the very tops of the tomatoes.
Use a small spoon to remove the insides; discard.
Turn the tomatoes upside down to drain while you prepare the filling.
In a small bowl, mix the cottage cheese, spinach, basil and chives.
Spoon into the tomatoes (or place in a pastry bag fitted with a large decorative tip; pipe the filling into the tomatoes).
