Stuffed Breast Of Veal Recipe

Ingredients
1 breast of veal - 2-2 1/2 lbs.
Salt and pepper
2 tablespoons fat
1 medium onion, diced
1/2 cup celery, finely chopped
3 tablespoons green pepper, finely chopped
3/4 cup raw carrots, grated
2 cups soft bread crumbs
1/2 teaspoon thyme
1/4 teaspoon paprika
1/4 cup butter, melted
Directions
Have breast of veal slit to form a pocket.
Wipe meat with a clean cloth.
Season.
Mix the last eight ingredients together for the dressing and stuff pocket.
Skewer or sew opening.
Place Dutch Oven over medium heat.
Add fat and brown veal breast well on all sides.
Cover and reduce heat to medium-low.
Cook until tender, about 2 hours.
