| Garlic | 10 Clove (5gm), finely chopped | |

| 7.5 cm piece root ginger, peeled and finely chopped | ||

| Salt | 1 Teaspoon | |
| Red wine vinegar | 600 Milliliter | |

Directions
Top and tail the okra and slit them down one side.
Mix the garlic, chillies, ginger, mint and salt together thoroughly.
Stuff the okra with this mixture and arrange in layers in a dish.
Sweeten the vinegar to taste with sugar and Dour over the okra to cover.
Cover and leave in a cool place for 12-24 hours for the flavours to mingle.
