Ingredients
6 firm tomatoes
1/2 lb walnuts or cashews, ground
1/2 c soy grits, softened in 1 c water
1/4 c Cheddar cheese, grated
1 /4 c green pepper, chopped
1/4 c sprouts, chopped
1/3 c stock
1/4 t sea salt
1 T olive oil
Directions
Core tomatoes and gently scoop out the pulp.
Dice pulp and mix with other ingredients.
Stuff mixture gently into tomatoes.
Pour oil in the bottom of a casserole and arrange tomatoes in dish.
Bake at 350° for 30 minutes.
The tomatoes will make their own sauce while baking.
