Directions

MAKING
1 Wash the apples and core, then pare about one third of the way down from the stem end.
2 Stand in a shallow baking dish, 13x9x2.
3 In a small bowl, mix brown sugar, raisins and cinnamon; spoon into centers of the apples, packing down well.
4 In a small saucepan, combine honey, water, butter or margarine and lemon peel.
5 Heat, stirring constantly, to boiling; pour over the apples and cover.
6 Bake in a moderate oven at 350 degrees farenheit, basting often with syrup in the dish for 1 hour, or until the apples are tender but still firm enough to hold their shape.
7 Cool in the dish on a wire rack, spooning syrup over apples often to make a rich glaze.

SERVING
8 Serve warm.
