Stuffed Avocado Recipe
Stuffed Avocado is a delicious appetizer recipe. The irresistible combination of avocados and cream and mayonnaise won't let you go away from it.
Ingredients
2 avocados
Lemon juice
2 tablespoons tarragon vinegar
1 teaspoon each salt and sugar
Dash liquid hot-pepper seasoning
2 tablespoons each finely chopped chives, green pepper, and pimiento
1 teaspoon unfavored gelatin
1/2 cup cold water
Crisp greens for garnish
1/2 cup each mayonnaise and sour cream
Directions
Halve the avocados, discard seeds, and spoon out pulp, leaving about 1/4, inch shell; brush inside each shell with lemon juice to prevent it from darkening.
Combine avocado pulp in a blender with vinegar, salt, sugar, and hot-pepper seasoning; whirl until smooth (or mash together well).
Stir in the chives, green pepper, and pimiento.
Soften gelatin in water, then stir over hot water until dissolved.
Stir gelatin into the avocado mixture.
Chill until syrupy.
Spoon into avocado shells and chill until set.
