Orange Pecan Stuffed Acorn Squash Recipe
Ingredients
| Acorn squash | 2 | |
| Butter/Margarine | 1 Tablespoon | |
| Brown sugar | 1 Tablespoon | |
| Salt | 1/4 Teaspoon | |
| Orange peel | 1/4 Teaspoon, grated | |
| Orange juice | ||
| Pecans | 2 Tablespoon, chopped | |
Directions
GETTING READY
1) Halve squash lengthwise and discard seeds.
MAKING
2) Grease a baking sheet and place squash cut side down.
3) Bake at 350° for 30 to 35 minutes till squash are tender.
4) Take out the pulp keeping a thin shell.
5) Mix together squash pulp, butter, brown sugar, salt, and orange peel.
6) Blend in enough orange juice about 2 teaspoons till fluffy.
7) Place mixture into shells.
8) Sprinkle pecans on top.
9) Bake for further 10 minutes.
SERVING
10) Serve hot.
