Streusel Topped Pumpkin Oatcakes Recipe
Ingredients
| 1 cup unbleached white flour | ||
| Whole wheat pastry flour | 1/2 Cup (16 tbs) | |
| 1/2 cup rolled oats, quick | ||
| Brown sugar | 2/3 Cup (16 tbs) | |
| Cinnamon | 1 Teaspoon | |
| 1/3 cup unsalted margarine | ||
| Buttermilk | 2/3 Cup (16 tbs) | |
| Baking soda | 1/2 Teaspoon | |
| Egg whites | 2 | |
| Vanilla | 1 Teaspoon | |
| 1/2 cup cooked pumpkin | ||
Directions
Combine flours, oats, sugar and cinnamon.
Cut in margarine until mixture resembles streusel.
Reserve 3/4 cup.
Add remaining ingredients and mix well.
Spoon batter into foil cupcake liners.
Sprinkle tops with reserved streusel mix.
Bake at 350° for 25 minutes.
