Strawberry Yogurt Mousse Recipe

Ingredients
1-1/2 envelopes unfavored gelatin 1.5
1/3 cup cold water 75 mL
1 pkg unsweetened strawberries, thawed
2/3 cup granulated sugar 150 mL
2 tbsp lemon juice 25 mL
1/4 tsp almond extract 1 mL
1 cup plain yogurt 250 mL
3 egg whites
Directions
In small heatproof measuring cup, stir gelatin into cold water.
Place in shallow saucepan of simmering water and heat gently until gelatin is dissolved.
In food processor or blender, puree; strawberries, 1/2 cup (125 mL) of the sugar, lemon juice and almond extract; process until sugar is dissolved.
Pour in gelatin mixture and process or blend thoroughly.
Transfer to shallow pan and place in freezer until partially set (consistency of raw egg whites), stirring frequently.
Whisk in yogurt.
In separate bowl, beat egg whites to soft peaks.
Gradually blend in remaining sugar.
Stir about one quarter of the egg whites into strawberry mixture; fold in remaining whites.
Spoon into 6 serving dishes and refrigerate until set, about 2 hours.
Place in shallow saucepan of simmering water and heat gently until gelatin is dissolved.
