Strawberry Waffles .With Berry Compote Recipe
Strawberry waffles with berry compote is a luscious dessert of strawberry filled waffle cakes and mixed berries compote. The waffles are cooked in the waffle iron with a batter of eggs, sugar, flour, milk and butter with strawberries folded in. served with a berry compote of black berries and strawberries with jam and cinnamon for flavor, the strawberry waffles and berry compote is a satisfying dessert.
Ingredients
2 eggs
170 gm plain flour
A pinch of salt
1 tbsp baking powder
30 gm caster sugar
290 ml milk
55 gm melted butter
6 medium-sized strawberries
10 gm melted butter for cooking waffles
For the berry compote
100 gm strawberry, chopped
100 gm black berries
100 gm mixed fruit jam
30 gm sugar
A pinch of cinnamon
Directions
Separate the eggs yolks from the whites.
Sift the flour, salt, baking powder and sugar together into a large bowl.
Make a well in the centre and add the egg yolks.
Stir the yolks, gradually drawing in the flour from the edges and adding the milk and melted butter.
Grease a waffle iron and heat.
Whisk the egg whites until stiff, but not dry and fold into the batter with a large metal spoon.
Chop the strawberries in small dices and fold them in the batter.
Add a little melted butter to the hot waffle iron, pour in about 4 tablespoons of the mixture, close and cook for 2 minutes.
Serve with hot butter, berry compote, maple syrup or your favorite jam.
For the berry compote Cook all ingredients in a thick bottom pan till most of the water disappears.
Keep stirring constantly.
Leave it to cool.
