Ingredients

 
2 lbs strawberries, washed with green stems removed
 
6 Tbs water
 
3/4 cup superfine sugar
 
1/4 tsp salt
 
Juice of 1 lemon
 
fresh mint, optional

Directions

Make simple syrup:
combine water, sugar and salt
heat to dissolve sugar and salt, stirring
Let cool

Puree strawberries in blender, in batches if needed
Add lemon juice to strawberry puree
taste strawberry puree and add simple syrup as necessary
Refrigerate puree until cold, at least 4 hours
Follow directions on ice cream maker
Once sorbet is finished, remove from ice cream maker and put in
an airtight container in freezer for 2 hours to ripen, served garnished with mint sprigs if desired

This should be a really refreshing dessert. Veg foodiee i think you should use honey..i was thinking on the same grounds too..it will be healthy also..

nice! i think though I'll use some natural sweetener for the syrup, maple syrup...or maybe honey.. I'm trying to cut back on processed sugar and sweeteners :)
