Strawberry Pancakes Recipe

Ingredients

 
1 cup all-purpose flour
 
1 tablespoon sugar
 
1 teaspoon baking soda
 
1/2 teaspoon salt
 
1 cup buttermilk
 
1 egg
 
1 tablespoon vegetable oil Strawberry preserves Sifted powdered sugar

Directions

Position plastic mixing blade in food processor bowl.
Add first 4 ingredients.
Top with cover, and process pulsing 3or 4 times until combined.
Add buttermilk, egg, and oil; process 10 seconds or until smooth.
For each pancake, pour about 1/4 cup batter onto a hot, lightly greased griddle.
Turn pancakes when tops are covered with bubbles and edges are browned.
Immediately spread each pancake with strawberry preserves, roll up, and secure with a wooden pick.
Sprinkle pancakes with the powdered sugar
