Strawberry Mousse Recipe

Ingredients
4 cups (1 L) fresh strawberries
1 cup (250 mL) fruit sugar
2 tbsp (30 mL) fresh lemon juice
2 egg whites
1 cup (250 mL) whipping cream
1 tsp (5 mL) vanilla extract
2 envelopes unflavored gelatin
3/4 cup (190 mL) cold water
Directions
Clean and slice the strawberries.
Place in a bowl with the fruit sugar and lemon juice.
Stir gently and set aside.
Beat the egg whites until stiff and whip the cream.
Add the vanilla, mix.
Place the unflavored gelatin in a microwave-safe measuring cup, add the cold water.
Microwave 2 to 3 minutes at MEDIUM.
It is ready when all the gelatin is dissolved.
Stir well and let cool slightly.
Now that all is ready, you must work fast.
Pour the gelatin over the strawberries and stir thoroughly.
Blend in the beaten egg whites, folding them gently into the mixture, then fold in the whipped cream.
Pour into an attractive cut glass dish.
Cover and refrigerate until ready to serve.
