Strawberry Cake Recipe

Ingredients

 
1 qt. Strawberries 8-inch round layer sponge cake
 
1/3 cup seedless raspberry jam
 
3 egg whites
 
1/4 tsp. cream of tartar
 
6 tbsp. sugar
 
1/2 tsp. vanilla
 
Raspberry jam

Directions

Heat oven to 275 degrees.
Wash, hull and dry perfect strawberries.
Put cake round on cookie sheet.
Spread with 1/3 cup raspberry jam.
Set berries, pointed end up, on top.
Beat egg whites and cream of tartar until frothy.
Continue beating, adding sugar gradually, until all sugar is used and mixture is stiff and glossy.
Beat in vanilla.
Spread 2/3 of this mixture over the berries and sides of cake.
Pipe remaining 1/3 of meringue mixture on top of cake with a pastry tube to make a lattice.
Bake 20 to 25 minutes or until meringue is dry to touch and lightly browned.
Cool.
Put a dot of raspberry jam in each square of the lattice and cut in wedges to serve.
