Directions

Preheat the oven to 375 degrees.
Sift the flour, baking powder, salt, and sugar together into a bowl.
In a large mixing bowl, combine the applesauce and yogurt.
Add the vanilla, cinnamon, and nutmeg, mixing well.
Beat in the brown sugar.
Stir in the oats.
Add the banana and mix well.
Add the flour mixture and blend well with a wooden spoon.
Pour the batter into a nonstick 9 1/4 inch loaf pan.
Bake for 40 to 50 minutes, until the loaf begins to separate from the edges of the pan and a tester inserted in the center comes out clean.
Remove from the oven, cool a few minutes in the pan, then turn the loaf out onto a rack.
