Ingredients

 
350 g (12 oz) ripe strawberries
 
6 tablespoons orange juice
 
finely grated rind of 1/2 orange
 
1 tablespoon honey
 
2 eggs, separated
 
2 teaspoons powdered gelatine
 
2 tablespoons water
 
4 tablespoons plain unsweetened yogurt

Directions

1. Reserve 4 whole strawberries for decoration.
2. Put the remaining strawberries into the liquidizer and blend until smooth.
3. Put the orange juice and rind, honey and egg yolks into a bowl; whisk until thick, light and creamy.
4. Put the gelatine and the water in a heatproof bowl and stand in a saucepan of hot water. Stir until the gelatine has dissolved.
5. Combine the strawberry puree and whisked egg yolk mixture, then stir in the dissolved gelatine and the yogurt.
6. Whisk the egg whites until stiff but not dry; as soon as the strawberry mixture is on the point of setting, fold in the whites lightly but thoroughly.
7. Spoon into glass dessert dishes and chill for 2-3 hours.
8. Decorate each dessert with one of the reserved whole strawberries and serve.
