Strawberry Valentine Recipe
Ingredients
2 cups crumbs from Basic Honey Cookies
1/2 cup butter, melted
8 ounces cream cheese, softened
8 ounces creamed cottage cheese
4 eggs
1/3 cup honey
1 1/2 teaspoons vanilla extract, divided
1 cup halved fresh strawberries
1 cup heavy cream
1 tablespoon honey
1 cup whole fresh strawberries
Directions
Preheat oven to 350°F.
Butter bottom and sides of a 9-inch spring-form pan.
In a medium-size bowl, thoroughly mix together cookie crumbs and butter.
Press onto bottom of springform pan to form a crust.
In a large bowl, beat cream cheese and cottage cheese together until fluffy.
Beat eggs in a small bowl, and then add to cheeses, mixing in until well blended.
Beat in 1/3 cup honey and 1 teaspoon vanilla.
In a blender or food processor, puree halved strawberries.
Beat into cheese mixture.
Turn into prepared pan, and bake on middle shelf of oven for 1 hour and 10 minutes.
Turn oven off, but allow cake to remain in oven for another hour.
Remove cake from oven and cool thoroughly.
In another medium-size bowl, whip cream, 1 tablespoon honey, and 1/2 teaspoon vanilla together, until soft peaks form.
Place cream into a pastry bag, and pipe onto cake in the shape of a heart.
Decorate with whole strawberries.
