Strawberry Or Raspberry Muffins Recipe
Over the years I have mastered the art of making Strawberry Or Raspberry Muffins which I was taught by my family elders. This Strawberry Or Raspberry Muffins is so tasty that I cannot resist serving it as a Snack often. A good way to use up Fruits is to make some irresistible Strawberry Or Raspberry Muffins. You don't have to be a gourmet to judge how mouth-watering and tasty this dish really is.
Ingredients
1 3/4 cups (440 mL) flour
1/3 cup (80 mL) sugar
2 tsp (10 mL) baking powder
1/2 tsp (2 mL) salt
1/3 cup (80 mL) vegetable oil
1 egg
1 package (425 mL) frozen strawberries or raspberries, thawed
Directions
€¢ Make sure the microwave-safe muffin pan is well oiled or use cupcake paper cups.
€¢ Place in a mixing bowl the flour, sugar, baking powder and salt.
€¢ Mix together in another bowl the oil, egg and 1 cup (250 mL) of the strawberries or raspberries and juice. Add to the dry ingredients and stir just enough to moisten the whole.
€¢ Fill the muffin pans only half full with the batter.
€¢ Microwave at HIGH 2 1/2 to 3 minutes or until done.
