Strawberry Meringue Pie Recipe
Ingredients
4 cup sugar-free, lowfat
1 L vanilla ice cream, softened
1 frozen pie crust, baked
3 cup fresh strawberries or frozen, unsweetened, thawed
2 large egg whites
1/4 tsp cream of tartar
1 1/2 tsp aspartame sweetener
Directions
Spread the ice cream into the pie shell, pushing it to the edges.
Freeze all day or overnight.
Just before serving, spread the strawberries on top of the ice cream and preheat the oven to 500°F (250°C).
Put the egg whites, cream of tartar, and aspartame into an electric mixing bowl.
Beat at high speed until the whites are stiff and form peaks but are not dry.
Spoon this meringue on top of the strawberries using the spoon to make decorative peaks.
Be sure all the surface is covered right up to the crust.
Put the pie on a wooden bread board and place it in the oven.
Bake for 5 minutes or so in the hot oven until meringue is lightly browned.
