Strawberry French Toast Triangles Recipe
Ingredients
| 8 slices low-carb white bread | ||
| 4 tablespoons cream cheese, at room temperature | ||
| Strawberries | 6 Medium, thinly sliced | |
| Eggs | 3 Large | |
| 1/4 cup reduced-carb, whole-milk dairy beverage | ||
| Unsalted butter | 1 Tablespoon, divided | |
| 1/2 cup sugar-free pancake syrup | ||
| Sugar | 1/4 Cup (16 tbs) | |
Directions
1. Spread 4 slices of bread with 1 tablespoon cream cheese each and divide strawberries among them. Top with remaining bread to make sandwiches.
2. Lightly whisk eggs and dairy beverage in a shallow bowl.
3. Heat half of the butter in a large nonstick skillet or griddle over medium heat. Dip sandwiches, one at a time, into egg mixture until saturated. Cook sandwiches, in batches if necessary, until golden brown, 3 to 5 minutes per side. Add remaining butter to skillet as needed.
4. Meanwhile, combine syrup and jam in a small bowl. Microwave until jam is melted and syrup is heated, 15 to 30 seconds. Stir well. To serve, cut sandwiches into triangles and dip into strawberry syrup.
