| Strawberries | 3 Cup (16 tbs), sliced | |
Directions
Place a small skillet over high heat, add the apple juice, and bring just to a boil.
Remove from the heat, and stir in the gelatin until it dissolves.
Transfer this mixture to a blender, add the diced strawberries, and puree until smooth.
Stir in the vanilla, cottage cheese, skim milk, and artificial sweetener, and blend thoroughly.
Place in a large bowl and refrigerate to keep cool.
Beat the egg whites until stiff peaks form.
Using a rubber spatula, gently fold the egg whites into the cooled mixture until completely blended and no trace of the whites is visible.
Gently fold in the sliced strawberries.
Divide the mixture evenly among eight 6-ounce custard cups or other serving dishes, and refrigerate until set, about 2 hours.
