Strawberry Cheese Chantilly Recipe
Ingredients
3 cups sliced strawberries
3/4 cup sugar
1 tablespoon lemon juice
2 eggs, separated
1 cup plain yogurt
1/2 cup (4 ounces) pot or ricotta cheese
1 tablespoon grated lemon rind
Pinch of salt
1 cup heavy cream, whipped
Garnishes:
Toasted chopped pecans, shaved chocolate, whole strawberries
Directions
Toss strawberries gently with 1/4 cup sugar and lemon juice.
Let sit at least 15 minutes, allowing strawberries time to exude their juices.
Beat egg whites in a clean, dry stainless-steel or copper bowl until stiff but not dry.
Gradually add 1/2 cup sugar, beating until stiff, shiny peaks form.
In a large bowl, blend yogurt, cheese, egg yolks, grated lemon rind, and salt.
Fold in the whipped cream, then the beaten egg whites.
Assemble in goblets or a crystal bowl, layering the cheese chantilly and strawberries, beginning and ending with chantilly.
Decorate with toasted pecans, shaved chocolate, and whole strawberries.
