Strawberry Banana Muffin Bites Recipe
Ingredients
| Whole wheat flour | 1 Cup (16 tbs) | |
| 3/4 cup unprocessed oar bran | ||
| 1/4 cup crunchy nutlike cereal nuggets | ||
| Sugar | 1/4 Cup (16 tbs) | |
| Baking powder | 2 Teaspoon | |
| Ground cinnamon | 1/2 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Banana | 1 Carton (1l) | |
| 1/4 cup reduced-calorie margarine, melted | ||
| Eggs | 2 , beaten | |
| 1/2 cup sliced fresh strawberries, slightly mashed | ||
| Ripe banana | 1/2 Cup (16 tbs), mashed | |
| Vegetable cooking spray | ||
Directions
Combine first 7 ingredients in a large bowl; stir well.
Combine yogurt, margarine, and eggs, blending well.
Add to dry ingredients, stirring just until moistened.
Gently fold in mashed strawberries and banana.
Spoon barter into miniature muffin pans that have been coated with cooking spray, filling three-fourths full.
Bake at 400° for 18 minutes or until golden.
Remove from pans immediately.
Combine yogurt, margarine, and eggs, blending well.
Add to dry ingredients, stirring just until moistened.
