Directions

1. Follow steps 1 through 4 in Plum Wine Gelatin, but use 2 cups water. (If using muffin pan in step 3, line with plastic wrap now.)
2. Beat egg whites with a wire whisk or electric hand mixer until soft peaks form. Add agar-agar in a fine stream while continuing to beat egg white (a little assistance may be required for this step). Continue to beat mixture for 1 minute longer. Mix in lemon juice.
3. Muffin pan: Line each cup with a 6-inch (15-cm) square of clear plastic wrap. Spoon in about 1/4 cup "snow," push a whole strawberry into center of each, and bring up plastic wrap, twisting ends to form a ball. Do this fairly quickly, because snow soon stiffens.
Cake pan: Use a small, square cake pan. Moisten pan with water. Spoon in snow and arrange whole strawberries, bottom end up, in several rows with bottoms just peeking out for easier cutting later on. Spread snow around with rubber spatula, if necessary.
4. Congeals, uncovered, in about 30 minutes. Unwrap snow balls to serve. The snow prepared in a pan should be cut to expose strawberries.
