Beef Consomme
6 eggs, beaten
1-1/3 cups freshly grated Parmesan or Romano cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon minced fresh
Italian parsley
Minced fresh chives
Directions
Bring broth to boil and adjust seasonings to taste.
Beat together eggs, cheese, salt, pepper and parsley.
Gradually pour into boiling soup, stirring with a fork to make ribbons of egg.
Cook a few minutes to set eggs.
