Stirred Custard Over Fruit Recipe
Ingredients
| Eggs | 2 Small, slightly beaten | |
| Sugar | 2 1/2 Tablespoon | |
| Skim milk | 1 1/3 Cup (16 tbs) | |
| Almond extract | 1/4 Teaspoon | |
| Vanilla extract | 1/4 Teaspoon | |
| Strawberries | 2 Cup (16 tbs) | |
| Kiwi | 2 | |
| Mandarin oranges - 1 (11-ounce) can , drained | ||
Directions
MAKING
1 In tp of a double boiler, add eggs, sugar, and milk, mixing well.
2 In the bottom of the double boiler, bring water to a boil.
3 Lower the heat and cook the custard over hot water.
4 Stir occasionally, until the custard thickens and coats a metal spoon.
5 Remove from the heat.
6 Stir in the flavorings.
7 In a bowl of ice water, place the pan and cover with waxed paper.
8 Chill thoroughly.
9 Add in the fruit and chill.
SERVING
10 Eqully divide the fruit among 6 individual serving dishes.
11 Spoon custard over fruit and serve.
