Stir Fry Chicken Recipe

Ingredients
2 whole Washington fryer breasts, skinned, boned, cut into 1 inch cubes
1/2 t. salt
3 T. vegetable oil
2 green onions, diagonally sliced
1 (10 1/2 oz.) can chicken broth
1 (7 oz.) package frozen Chinese pea pods OR 1 (10 oz.) package frozen peas, thawed
1 c. sliced fresh mushrooms OR 1 (3 oz.) can sliced mushrooms, drained
2 T. sliced pimiento
1 T. cornstarch
1/4 c. toasted slivered almonds
Directions
Prepare chicken, sprinkle with salt.
In skillet or wok, stir fry chicken in oil over medium to high heat, until tender.
Remove from skillet.
To skillet add onions, pea pods OR peas, mushrooms, pimiento and stir fry 1 minute.
Sprinkle with cornstarch.
Stir in chicken broth and simmer, stirring frequently, until thickened.
Add slivered almonds and chicken and heat through.
