Stir Fried Vegetables With Bulgur Recipe
Ingredients
2 tablespoons vegetable oil
2 cups broccoli flowerets
1 cup thinly sliced carrots
1 cup bulgur wheat
1 small clove garlic, minced
1 tablespoon sesame seed
1 teaspoon dried oregano leaves, crushed
1 3/4 cups Vegetable Juice
1 cup thinly sliced zucchini
1 cup sliced Mushrooms
1/4 cup sliced green onions
1/2 cup shredded Swiss cheese (2 ounces)
Directions
In 10-inch skillet or wok over medium-high heat, in hot oil, cook broccoli, carrots, bulgur, garlic, sesame seed and oregano, stirring quickly and frequently (stir-frying), about 2 minutes.
Add juice, zucchini, mushrooms and green onions.
Heat to boiling; reduce heat to low.
Cover; simmer 15 minutes or until all liquid is absorbed, stirring occasionally.
Stir in cheese.
