Ingredients

 
1-1/2 lbs. turbot fillet
 
Seasoning sauce:
 
3 tablespoons soy sauce
 
1/2 teaspoon salt
 
1 teaspoon sugar
 
1/2 cup water
 
1 teaspoon cornstarch
 
3 tablespoons chicken broth
 
1/4 teaspoon pepper
 
5 tablespoons lard or vegetable oil
 
1 tablespoon hot bean sauce
 
4-1/2 teaspoons minced fresh ginger root
 
1 tablespoon rice wine or dry sherry
 
4-1/2 teaspoons minced garlic
 
1/4 cup chopped green onions
 
1 tablespoon sesame oil

Directions

Cut turbot into 1-1/2-inch squares with a sharp knife.
Rinse with cold water and pat dry with paper towels.
Combine ingredients for seasoning sauce in a small bowl; mix well and set aside.
Heat lard or oil in a wok over high heat 1 minute.
Add turbot squares.
Stir-fry about 30 seconds until fish becomes white.
Add hot bean sauce, ginger root, wine and garlic.
Stir-fry 30 seconds.
Add seasoning sauce and green onions.
Stir-fry 1 minute.
Sprinkle with sesame oil.
