| 2 tablespoons tamarind pulp | ||
| 1/2 cup/125 ml/4 fl oz water | ||
| Vegetable oil | 2 Teaspoon | |
| Lemon grass | 3 , finely chopped | |
| Red chillies | 2 , chopped | |
| 500 g/1 lb medium uncooked prawns, shelled and deveined, tails intact | ||
| 2 green (unripe) mangoes, peeled and thinly sliced | ||
| Coriander leaves | 3 Tablespoon, chopped | |
| Brown sugar | 2 Tablespoon | |
| Lime juice | 2 Tablespoon | |
Directions
1. Place tamarind pulp and water in a bowl and stand for 20 minutes. Strain, reserve liquid and set aside. Discard solids.
2. Heat oil in a wok or frying pan over a high heat, add lemon grass or rind and chillies and stir-fry for 1 minute. Add prawns and stir-fry for 2 minutes or until they change colour.
3. Add mangoes, coriander, sugar, lime juice and tamarind liquid and stir-fry for 5 minutes or until prawns are cooked.
